Khandvi Recipe: A Light and Healthy West Indian Breakfast

Khandvi, also known as Suralichi Vadi, is a popular snack from Gujarat and Maharashtra. It is loved for its delicate texture, mild flavor, and beautiful rolled appearance. This healthier version replaces regular curd with vegan curd while keeping besan as the main ingredient, making it a nutritious breakfast that is rich in protein and suitable for balanced eating.

Why This Khandvi Is a Healthy Choice

Besan (chickpea flour) is naturally high in protein and fiber, helping promote fullness and gradual energy release. Using vegan curd instead of dairy makes the recipe lighter while maintaining its smooth texture and tangy flavor.

The minimal use of oil and gentle cooking method further enhance its nutritional value.

Ingredients

For the batter

  • 1 cup besan (chickpea flour)

  • 1 cup vegan curd

  • 2 cups water

  • ¾ tsp green chilli paste

  • ¾ tsp ginger paste

  • Salt to taste

For tempering

  • 1¼ tsp mustard seeds

  • ¾ tsp cumin seeds

  • ¼ tsp asafoetida

  • 2 green chillies

  • Curry leaves

  • 2 tsp red chilli powder

  • Fresh coriander

  • Grated coconut

Method

  1. Mix vegan curd, water, and besan until smooth.

  2. Add ginger paste, chilli paste, and salt.

  3. Cook over medium heat while stirring continuously.

  4. Once the mixture thickens, spread it immediately into thin layers on plates.

  5. Allow it to cool slightly.

  6. Cut into long strips and gently roll each strip.

  7. Prepare the tempering by roasting mustard seeds, cumin, curry leaves, green chillies, and asafoetida.

  8. Pour the tempering over the rolls.

  9. Garnish with coriander and grated coconut.

Serving Suggestions

Serve with green chutney or enjoy as a light breakfast or evening snack.
