Step-by-Step Method to Prepare the Soup

First, drain the water from the soaked kidney beans. Add two cups of fresh water, salt, and bay leaves. Pressure cook for two to three whistles until the beans become soft. Once done, remove and discard the bay leaves and keep the beans aside.

Heat oil in a deep non-stick pan. Add chopped garlic and sauté for a few seconds on medium flame. Add sliced onions and cook until they turn soft. Next, add capsicum and sauté briefly.

Now add chopped tomatoes and cook until they soften and blend well. Add the cooked kidney beans along with the water used for cooking. Mix well and bring the soup to a boil. Add salt and black pepper as required.
