Parwal Kalimiri is a simple yet flavorful Maharashtrian-style vegetable dish prepared using pointed gourd (parwal), garlic, and black pepper. Pointed gourd is naturally low in calories and carbohydrates while providing fiber, vitamins, and antioxidants. The bold flavor of freshly ground black pepper and garlic makes this recipe both delicious and satisfying without relying on heavy gravies.

This diabetes-friendly version uses minimal oil and preserves the skin of the parwal, helping retain its fiber and nutrients. Served with khapli (emmer) wheat roti, it makes a wholesome lunch option for people looking to maintain healthy blood sugar levels.

Why This Recipe Is Diabetes-Friendly?

Parwal is a low-glycemic vegetable that supports healthy blood sugar management. Garlic contains beneficial plant compounds, while black pepper enhances flavor naturally, reducing the need for excessive salt or rich ingredients. Using very little oil keeps the dish light yet satisfying.

Ingredients

  • 500 g pointed gourd (parwal)

  • 6–8 garlic cloves

  • 1 tsp cumin seeds

  • 2–3 green chilies

  • 2 dried red chilies

  • 2 tsp whole black peppercorns

  • 1 tsp black pepper powder

  • ½ tsp turmeric powder

  • Salt to taste

  • 1 tsp oil

Method

  1. Wash the pointed gourds thoroughly and cut each into four pieces without removing the skin.

  2. Blend garlic, cumin seeds, green chilies, dried red chilies, whole black peppercorns, and a little water into a smooth paste.

  3. Heat oil in a pan and sauté the parwal over medium heat until lightly golden and partially cooked. Remove and keep aside.

  4. In the same pan, cook the prepared spice paste until the raw aroma disappears.

  5. Add turmeric powder and salt.

  6. Return the sautéed parwal to the pan and mix well.

  7. Sprinkle a little water if required and cook on medium heat for about 10 minutes until tender.

  8. Add freshly ground black pepper powder and cook for another 2–3 minutes.

  9. Serve hot with khapli wheat roti.
