Gatte ki Sabzi is a traditional dish from Rajasthan made using gram flour dumplings cooked in a spiced gravy.

The word “gatte” refers to boiled gram flour rolls that are cut into pieces and added to curry. In the traditional version, curd is often used, but in a lighter variation, tomato and onion-based gravy works very well.

This makes it a practical recipe when vegetables are limited but you still want a wholesome meal.

Gram flour, also known as besan, is the main ingredient in this recipe and is considered more suitable than refined flour for many people.

  • 100 g gram flour (besan)

  • 3 medium tomatoes (finely chopped)

  • 2 medium onions (finely chopped)

  • 4 green chillies (finely chopped)

  • 1 tbsp ginger-garlic paste

  • ½ tbsp turmeric powder

  • ½ tbsp mustard paste

  • ¼ tbsp red chilli powder

  • ¼ tbsp coriander powder

  • A pinch of asafoetida

  • 1 tbsp cumin seeds

  • ½ tbsp carom seeds (ajwain)

  • ¼ tbsp garam masala

  • Oil as required

  • Salt to taste

  • Water as needed

Method

Start by mixing gram flour with chopped green chillies, carom seeds, red chilli powder, salt, and a small amount of oil. Slowly add water and knead it into a smooth dough.

Divide the dough and shape it into long cylindrical rolls. These should look similar to small kebabs.

Boil water in a pan and cook the rolls for around 10 minutes until they become firm. Remove them from water, allow them to cool slightly, and cut into small round pieces. These are called gatte.

To prepare the gravy, heat oil in a pan. Add asafoetida and cumin seeds and let them crackle. Add green chillies and ginger-garlic paste and sauté briefly.

Next, add onions and cook until soft. Add tomatoes and cook until they blend well into the mixture.

Now add turmeric, red chilli powder, coriander powder, salt, and garam masala. Pour water and let the gravy simmer for a few minutes.

Finally, add the prepared gatte pieces into the gravy and cook for a few more minutes until the curry thickens and absorbs the flavor.
